This is the best vegan salad ever (with a special secret sauce recipe)

Once, many years ago, I ate a perfect vegan salad in an Italian restaurant that has long since closed. This salad was so perfect not because of the lettuce or the four cherry tomatoes tossed on it – its dressing was simply divine.

Even though I was a student, I went back to the same restaurant time after time, and for the same perfect vegan salad I paid an outrageously ridiculous price for some lettuce, tomatoes and croutons – far beyond what the average student could afford.

One day I made up my mind: I had to reveal the secret and keep paying for that salad over and over again, or mortgage my life to the bank. I went to the same restaurant one last time, ordered my favourite vegan salad and asked for some extra dressing on the side. I poured the sauce into an empty vial prepared in advance for the task, and from there I continued to the kitchen on a journey of experimentation – until the secret was revealed and I’ve finally discovered the recipe (or at least something very similar to it).

Since then, it’s been our regular vegan lettuce salad, and it’s the best there is. Always the most popular at every family event, there is no one who doesn’t like it and asks for more (even 4 year olds!). So here they are – the recipe for my secret sauce for a perfect vegan salad, and also the recipe for the salad itself.

Secret sauce for a vegan lettuce salad

(Quantity fit a medium jar)
3 heaped teaspoons of brown / white sugar
3 heaped teaspoons of Dijon mustard
4 teaspoons of lemon juice
4 teaspoons balsamic vinegar
8 teaspoons of soy sauce
Olive oil – add the same amount to the rest of the sauce
Close the jar and blend well.

The perfect vegan lettuce salad

Hand torn soft lettuce
A handful of cherry tomatoes cut into quarters
Thin slices of purple onion
Crispy tofu or golden tofu strips made in a pan
Crotons
3-5 tablespoons of the secret sauce (personal preference)

Miss your flat belly after giving birth? It is possible to get it back, and even within a short period of time. How do you get along with breastfeeding and proper nutrition, why is it important to train your abdominal muscles even for five minutes a day, and what if the weight just won’t go?

The smaller the weight gain during pregnancy, the faster the belly will return to its original shape. A large increase in weight causes the skin to stretch more and therefore to the formation of excess skin that is very difficult to get rid of, and increased laxity of the abdominal muscles.

Give it time

Within six months to a year from the day of birth, your tummy shape will improve significantly and will almost returns to normal. It may not seem like that in the first month or two after giving birth, when everyone asks you – “Are you still pregnant?!”, but it will pass. For sure.

Work on your abs

Daily training of the abdominal muscles can get your flat stomach back within two to three months after giving birth. Note that without any training of the abdominal muscles, the loose belly will just stay there and not go down. Such training can take even five minutes a day (not so bad, right?), and can be performed lying on a mattress or a fitness ball. It’s worth it.

What about breatfeeding?

Breastfeeding is not a time to diet, but that doesn’t mean you have to destroy yourself with junk food either. You can eat healthy and lose your belly after giving birth even during breastfeeding, if you just adopt healthy eating habits: stock up on fruits, vegetables and low-calorie snacks, don’t bring junk into the house and prepare at least some of the meals in advance.

Last extra weight

If you still remain a little overweight, it is likely that most of the extra weight will go away after you’re done with breastfeeding, when the feeling of constant hunger ceases and the body re-adapts to the routine. If you continue to adhere to a healthy diet and workout, eventually you will recover and manage to get your flat tummy back.
